What size generator for a food truck?

No truck was tested for this page. The pick is the watt class that clears one published appliance list after this site's formula, not a star rating.
The list that is actually on a chart
Food-truck articles often invent a fryer wattage. This page does not. Honda's wattage guide does publish these rows:
| Load | Running watts | Starting watts |
|---|---|---|
| Refrigerator or freezer, Energy Star | 132–192 | 1,200 |
| Coffee maker, 4 cup | 600 | 600 |
| Microwave, 650 watts | 1,000 | 1,000 |
The worked case uses 192 W running for the fridge, the high end of Honda's range. Honda's microwave row labeled "650 watts" is the oven's cooking rating. The generator sees 1,000 W running and 1,000 W starting. That distinction is already spelled out on the microwave page.
Worked example
Inputs, all on together, headroom 20%, 8 hours a day, 4 gallon tank. Same steps as sizeGenerator() in assets/app.js:
- Running total = 192 + 600 + 1,000 = 1,792 W.
- Largest starting wattage is the fridge at 1,200 W, which is higher than the microwave's 1,000 W. Extra surge = 1,200 − 192 = 1,008 W.
- Peak = 1,792 + 1,008 = 2,800 W.
- 2,800 × 1.20 = 3,360 W, rounded up to the next 500 W = 3,500 W recommended.
- Gasoline at 50% of that recommendation = 3,500 / 7,000 = 0.5 gallons per hour. A 4 gallon tank lasts 8.0 hours. Propane at 1.37 times that gasoline rate lasts 5.8 hours on the same 4 gallons. At 8 hours a day the gasoline figure is 4.0 gallons per day.
So the class that matches this list is a generator whose published running rating clears 3,500 W, with a starting rating that clears the 2,800 W peak. That is the whole "best" claim on this page. Check the model sheet. Do not treat an Amazon title as the spec.

A common mistake
Adding every starting watt (1,200 + 600 + 1,000 = 2,800) and then adding them again on top of the running total double-counts the microwave and the coffee maker. Those two rows already use the same number for start and run. Only the fridge has a real gap between 1,200 and 192, and the formula adds that gap once.
The other mistake is pasting a 240 V electric range onto a food-truck receptacle plan. Honda marks an 8-inch range element at 2,100 W and flags 240 V. This three-item list does not include it.
Limits, and when to call a pro
A health-department truck with a hood, a propane fryer, and an electric refrigerator is an installation, not a tailgate. Hardwiring a generator into the truck, or tying it to a commissary panel, takes a licensed electrician and a permit where local code requires one. Carbon monoxide rules do not relax because the load is a coffee maker. Run the set outdoors, exhaust away from the service window. The placement wording is on how to run a generator safely.
If your equipment nameplate is higher than Honda's row, the nameplate wins. Re-enter those watts on the calculator.
